Kabocha pudding-cupcakes

I tried this recipe today.

I bought a large kabocha so I split it between two recipes (still in the oven).

Don't be fooled by the bread-y top, most of it was a very soft pumpkin pudding-esque texture.
(softer than angel food cake though)

I reduced the sugar to 2/3 so the mellow pumpkin flavor really stands out.
